I’m entering 2018 with some fresh new ideas for y’all. Recipe developing for me has been a bit stagnant with everything going on in my life, and so here’s my idea. How about a vegetable of the month post with a round up of some beautiful recipes for all of us to try out?
This month I’m focusing on BEETS.
Why? Well, whether they’re a deep, purplish red or bright golden yellow, beets are one of the most nutritious and delicious vegetables in existence.
Not only are they loaded with vital nutrients such as vitamin C, fiber, folate (which helps prevent birth defects), manganese, potassium (which helps reduce blood pressure), and iron (which helps with the transportation of oxygen in our red blood cells). They’re also one of the easiest vegetables to cook!
Beets can be boiled or roasted to perfection. They can be seasoned and eaten hot off the grill, or chopped up, tossed in a bed of salad, and topped off with some goat cheese. As a vegetarian and health conscious person, beets are one of my go-to vegetables.
Some may find the dark, rough exterior of the vegetable intimidating. But all I have to say to you is, don’t be wary of beets. Enjoy them. Embrace them. Dice them up and eat them!
