Happy Mother’s Day to all of the moms out there in the world! Today I specifically want to give a special shout out to my mama. She is my role model, one of my best friends, greatest supporters, and one of the few people in the world I can trust to always be honest with me. She has taught me how to be strong, brave, kind, caring, and understanding of others through her words and actions. She’s inspiring, motivating, and selfless. She taught me that hard work and kindness are more important than anything else in the world. Because of her, I am who I am today. I don’t know how I got so lucky to have such an amazing woman as my mother, but I guess I hit the jackpot in the mom department. People, she is AMAZING. After all, she had the patience to put up with me for twenty something years.
This refreshing salad recipe is something my mom whipped up for all of us this weekend. I know. It was Mother’s Day Weekend and she cooked. What can I say? People prefer her cooking over mine.
Ingredients:
- 2 avocados (cubed)
- 6 roma tomatoes (cubed)
- 1/4 of a whole red bell pepper
- 1/4 of a whole red onion (diced)
- 1/2 English cucumber (cubed)
- 2 Tbsp chopped cilantro
- 2 Tbsp olive oil
- 2 Tbsp lemon juice
- 3/4 tsp salt
- 1/8 tsp pepper
Instructions:
- In a large bowl, toss the avocados, tomatoes, bell pepper, cucumber, and red onion together.
- In a separate smaller bowl, mix the olive oil, lemon juice, salt, and pepper. Taste and then pour it over with the salad mix. Toss and make sure all of the vegetables are evenly coated. Top with cilantro.
Again, it’s another easy, healthy, and cheap recipe for you all! It’s very refreshing, and so it’ll be perfect for the warmer days encroaching upon us. To all you moms out there, I hope you had a wonderful Mother’s Day because you sure as hell deserve it!
For my mom, my sister and I took her and my dad out to Pacific Grove, CA where we had some coffee and brunch at the Red House. We then headed off to Point Lobos for a leisurely hike/walk. It was an overcast day, but the surface of the ocean was a beautiful deep, dark blue that shimmered in the bit of sunlight.
