My little sister is home for the week and so we’ve been cooking multiple dishes alongside each other. I have quite a few recipes I still need to post for you guys since she and I have been spending a lot of our time in the kitchen. Up above is a healthy and simple sweet potato fries recipe. Sweet potatoes are great sources of vitamin A (which plays a large role in keeping our eyes, skin, and teeth healthy), fiber, and complex carbohydrates. When they aren’t being deep fried in a vat of oil, they are high nutrient density foods for you and are known to possibly reduce the risk of cancer (due to the beta-carotene which are antioxidants that help protect our cells).
Ingredients:
- 2 sweet potatoes (sliced)
- 4 Tbsp olive oil
Seasoning for taste:
- salt and pepper
- dried oregano
- dried thyme
- dried rosemary
Instructions:
- Preheat the oven 400 degrees Fahrenheit
- Toss the sliced sweet potatoes with the olive oil in a small bowl. Sprinkle some salt and grind some pepper over them. Spread onto a lightly greased baking sheet and bake for about 20-30 minutes. You may need to flip about halfway through.
- Periodically check on the fries and remove when they are a golden brown and tender on the inside. Pour them into a bowl, sprinkle the dried herbs, and eat with ketchup or any dipping sauce of your preference.
Yes, they are magically delicious! She and I devoured them in a matter of minutes. I’ll admit that she did most of the cooking (all of the cooking) for this one. I’m leaving the cooking to her tonight. I’m off to go climbing! Let’s eat, exercise, maximize productivity, and be AWESOME!
