Healthier Strawberry Ice Cream (Vegan)

A yummy, healthy, creamy, and vegan strawberry ice cream that contains no added refined sugar (only fruit!).
  • 1 cup cashews (soaked for at least 4 hours or over night and then drained)
  • 1 15 oz. can of full fat coconut milk (chilled in the fridge)
  • 1 tsp vanilla extract
  • 8 Medjool dates (pitted)
  • 7-12 strawberries (diced)
  1. After the cashews have been soaked and drained and the coconut milk chilled, take out your food processor or a powerful blender and put the dates and cashews into it. Blend until the mixture is all smooth with no chunks.
  2. Add the coconut milk, vanilla extract, and 5-6 strawberries. Blend until smooth. Taste and see if you'd like to add more dates or strawberries.
  3. Pour the mixture into a bread loaf pan. Add the rest of the diced strawberries into the mixture and stir it in. You can dice more strawberries and mix them in if you'd like.
  4. Cover the ice cream with foil and place it in the fridge. Every 30-40 minutes, take it out and stir it. Make sure to scrape down the sides. Do this 3-4 times.
  5. Once the ice cream is frozen, you may need to wait 10-15 minutes for it to be soft enough to serve.
